Storage Time
When dressed, arugula salad should be consumed within 1-2 days, stored properly in the refrigerator. For maximum freshness, store undressed arugula leaves separately in an airtight container with a paper towel, and keep the dressing in a separate container; this method can extend the arugula's crispness for 3-5 days in the fridge.
Temperature
Keep refrigerated at 0–4°C (32–40°F) to slow down spoilage and maintain freshness.
Signs of Spoilage
- Wilting and Slimy Texture: The most common sign is when the vibrant green arugula leaves become limp, dark, and develop a slimy, wet texture, indicating significant moisture loss and cellular breakdown.
- Sour or Unpleasant Odor: A fresh arugula salad has a mild, peppery aroma. If you detect a sour, fermented, or otherwise off-putting smell, it's a clear indicator that bacterial growth has begun, rendering it unsafe to eat.
- Discoloration and Dark Spots: Look for leaves that have turned yellow, brown, or developed dark, waterlogged spots, which are signs of decay and spoilage.
- Visible Mold Growth: Any fuzzy white, green, or black patches on the leaves or other salad components are definitive signs of mold and mean the entire salad must be discarded immediately.
