Freezing
Éclairs can be frozen, though the texture of the choux pastry may soften slightly upon thawing. For best results, freeze unfilled choux shells or fully assembled éclairs without the glaze. Wrap them tightly in plastic wrap, then in aluminum foil or place in an airtight freezer-safe container. To thaw, place refrigerated éclairs on a wire rack at room temperature for a few hours. If freezing unfilled shells, warm them briefly in a low oven (around 150°C/300°F) for a few minutes to restore crispness before filling and glazing.
