Fresh beetroots, with their vibrant earthy flavor and rich color, are a versatile root vegetable perfect for roasting, boiling, or juicing. Proper storage ensures their sweetness and nutritional value are preserved for your culinary creations.
Storage Time
Up to 2-4 weeks in the refrigerator, 8-12 months when properly frozen.
Temperature
Ideal storage temperature for fresh beetroots is between 0°C and 4°C (32°F and 40°F) in a cool, humid environment.
Freezing
To freeze fresh beetroots, it's best to cook them first. Wash, peel, and either dice or slice the beets. Blanch them in boiling water for 2-3 minutes, then immediately plunge them into ice water to stop the cooking process. Drain thoroughly and spread them in a single layer on a baking sheet to freeze before transferring to airtight freezer bags or containers. This method helps maintain their texture and flavor. Thaw frozen cooked beets in the refrigerator overnight or gently reheat them.
Signs of Spoilage
- Soft or mushy texture, indicating decay.
- Development of mold, often appearing as fuzzy white or green patches.
- A sour or fermented smell, a clear sign the beets are no longer fresh.
