Fresh borlotti beans, with their distinctive speckled pods and creamy texture, are a delightful seasonal ingredient. Storage Time
3-5 days in the fridge (in pods), 2-3 days (shelled); up to 6-8 months in the freezer (blanched).

Freezing
To freeze fresh borlotti beans, first shell them from their beautiful pods. Blanch the shelled beans in rapidly boiling water for 2-3 minutes, then immediately plunge them into an ice bath to halt the cooking process and preserve their color and texture. Drain them thoroughly and pat dry. For best results, spread the blanched beans in a single layer on a baking sheet and flash freeze for a few hours until solid. Once frozen, transfer them to airtight freezer bags or containers, removing as much air as possible to prevent freezer burn. They will maintain their quality for 6-8 months. Thaw overnight in the refrigerator or cook directly from frozen in your favorite recipes.
Signs of Spoilage
- A sour, fermented, or off-putting smell, indicating bacterial growth and spoilage.
- A slimy, mushy, or excessively soft texture on the beans, which is a clear sign of decay.
- Visible mold growth, appearing as fuzzy white, green, or black patches on the beans or inside the pods.
- Significant discoloration, such as dark spots, a dull, faded appearance, or yellowing on the pods or beans.
