Fresh kohlrabi bulbs, with their crisp texture and mild, slightly sweet flavor, are a versatile addition to many healthy dishes. Proper storage is essential to preserving their unique taste and crunchy quality, ensuring they remain delicious for salads, stir-fries, or roasting.
Storage Time
When stored correctly, fresh kohlrabi bulbs can last for 2-3 weeks in the refrigerator. For longer preservation, blanched kohlrabi can be frozen for up to 8-12 months.
Temperature
For optimal freshness, store kohlrabi bulbs in the coldest part of your refrigerator, ideally at temperatures between 0–4°C (32–40°F).
Freezing
To freeze fresh kohlrabi, first wash, peel, and cut the bulbs into desired pieces (slices or cubes). Blanch the kohlrabi in boiling water for 2-3 minutes, then immediately transfer to an ice bath to stop the cooking process. Drain thoroughly, pat dry, and pack into freezer-safe bags or containers, removing as much air as possible. Frozen kohlrabi may have a slightly softer texture upon thawing, making it best suited for cooked dishes rather than raw preparations. Thaw overnight in the refrigerator or cook directly from frozen.
Signs of Spoilage
- A soft, rubbery, or mushy texture, indicating a significant loss of crispness and cellular breakdown.
- Any visible mold growth, which can appear as fuzzy white, green, or black spots on the surface of the bulb.
- Discoloration, such as yellowing, browning, or the development of dark, slimy spots on the kohlrabi's exterior.
- An unpleasant, sour, or fermented odor, which is a clear and unmistakable sign that the kohlrabi has spoiled and should be discarded.
