Freezing
To freeze fresh topinambur, wash and peel the tubers, then cut them into desired pieces. Blanching them in boiling water for 2-3 minutes before freezing helps retain their quality and color. Cool them completely in ice water, drain well, and spread them in a single layer on a baking sheet to freeze solid. Once frozen, transfer them to airtight freezer bags or containers. Thaw frozen topinambur in the refrigerator overnight or use directly in cooked dishes. Freezing may slightly alter the texture, making them softer after thawing.
