Freezing
Lemon macarons freeze exceptionally well. To freeze, place them in a single layer on a baking sheet and freeze until solid, then transfer to an airtight container or freezer bag. Thaw them slowly in the refrigerator overnight for the best texture, or at room temperature for about an hour. Freezing may slightly soften the shells, but the flavor remains vibrant.
Signs of Spoilage
- Shells become excessively soft or gummy, losing their characteristic crispness.
- Filling develops an off-smell, such as sourness or moldiness.
- Visible mold growth on the shells or filling.
