Raw peanuts, whether shelled or in their natural shell, are a nutritious and versatile legume. Due to their high oil content, proper storage is essential to prevent them from turning rancid and to maintain their fresh, nutty flavor and beneficial nutrients. Understanding optimal storage conditions will help you enjoy them longer and reduce food waste.
Storage Time
Shelled raw peanuts can be stored for 1-2 months in a cool, dark pantry, or up to 6 months in the refrigerator. Raw peanuts in their shell boast a longer shelf life, lasting 3-4 months in the pantry and an impressive 9-12 months when refrigerated. For maximum longevity, freezing extends their freshness for up to 1 year.
Temperature
For optimal pantry storage, keep raw peanuts in a cool, dry place, ideally below 20°C (68°F), away from direct sunlight and heat sources. Refrigeration at 0–4°C (32–39°F) significantly slows down the oxidation process, preserving their quality for much longer.
Freezing
Raw peanuts freeze exceptionally well, making it an excellent method for long-term preservation. To freeze, place shelled or in-shell peanuts in heavy-duty freezer bags or airtight containers, ensuring to remove as much air as possible to prevent freezer burn. Label with the date of freezing. When ready to use, simply take out the desired quantity; they can be used directly in recipes from frozen, or allowed to thaw at room temperature for a few hours. For larger batches, thawing overnight in the refrigerator is recommended.
Signs of Spoilage
- A distinct rancid, bitter, or sour smell, often described as like old paint, crayons, or stale oil, is the most reliable indicator that raw peanuts have spoiled.
- Visible mold growth, appearing as fuzzy green, black, or white spots on the surface of the peanuts, signifies contamination and they must be discarded.
- A shriveled, discolored, or unusually soft and rubbery texture, along with a dull appearance, suggests that the peanuts are past their prime and have lost their freshness.
