Storage Time
For optimal taste and food safety, tuna nigiri should be consumed immediately after preparation. If absolutely necessary, store it in an airtight container in the coldest part of your refrigerator for no more than 24 hours. Freezing is not recommended due to significant quality degradation.
Temperature
Keep refrigerated at a consistent temperature between 0–4°C (32–39°F) to inhibit bacterial growth and preserve freshness.
Signs of Spoilage
- A strong, pungent, or sour fishy odor, rather than the mild, clean scent of fresh seafood. Any ammonia-like smell is a clear indicator of spoilage.
- The tuna appears dull, discolored (turning greyish, brownish, or greenish instead of its vibrant red or pink hue), or develops a slimy, sticky film on its surface. The rice may also look dry, hard, or discolored.
- The texture of the tuna becomes unusually soft, mushy, or excessively sticky to the touch. The sushi rice might feel hard, crumbly, or excessively dry, losing its characteristic tender chewiness.
