Whether you've prepared it fresh or have delightful leftovers, understanding the best storage practices is crucial for enjoying this savory poultry dish and preventing foodborne illness.
Storage Time
3–4 days in the refrigerator, up to 2–3 months frozen for optimal quality.
Temperature
Keep refrigerated at 0–4°C (32–40°F) to inhibit bacterial growth and maintain freshness.
Freezing
To freeze chicken satay effectively, allow the cooked chicken skewers and peanut sauce to cool completely. It's best to store the chicken and sauce separately. Place the cooled chicken skewers in a single layer on a baking sheet to flash freeze for about an hour, then transfer them to an airtight freezer-safe bag or container, removing as much air as possible to prevent freezer burn. The peanut sauce should be stored in its own airtight container. When ready to enjoy, thaw the frozen chicken satay overnight in the refrigerator and reheat thoroughly to an internal temperature of 74°C (165°F). The sauce can also be thawed in the fridge and gently reheated, stirring well to restore its creamy consistency; some slight texture change is normal.
Signs of Spoilage
- An off-putting, sour, or ammonia-like odor that replaces the fresh, aromatic scent of the spices and grilled chicken.
- The surface of the chicken skewers developing a slimy or sticky film, indicating bacterial growth and spoilage.
- Any visible discoloration, such as a grayish or greenish tint on the chicken, or the presence of fuzzy mold spots on either the chicken or the accompanying peanut sauce.
