Chicken souvlaki, featuring tender marinated and grilled chicken pieces, is a delightful Mediterranean dish. Proper storage is crucial to preserve its succulent flavor and ensure food safety, preventing the growth of harmful bacteria and maintaining its delicious quality.
Storage Time
Cooked chicken souvlaki can be safely stored in the refrigerator for 3 to 4 days. For longer preservation, it can be frozen for up to 2 to 3 months, maintaining its quality and taste.
Temperature
Always keep cooked chicken souvlaki refrigerated at a consistent temperature between 0–4°C (32–40°F) to inhibit bacterial growth and maintain optimal freshness. When freezing, ensure the freezer temperature is at or below -18°C (0°F).
Freezing
To freeze cooked chicken souvlaki, first ensure it has cooled completely to room temperature within two hours of cooking. Place the chicken pieces in an airtight freezer-safe container or wrap them individually in plastic wrap and then foil to prevent freezer burn and preserve moisture. When ready to enjoy, thaw the frozen souvlaki slowly in the refrigerator overnight. Reheat thoroughly on the stovetop, in the oven, or microwave until it reaches an internal temperature of 74°C (165°F) to ensure it's safe to eat, though some texture changes may occur.
Signs of Spoilage
- A distinct sour, pungent, or ammonia-like odor, which is a clear indicator that the chicken has gone bad and should be discarded immediately.
- A slimy or sticky film developing on the surface of the chicken, signaling bacterial proliferation and an unsafe product.
- Any noticeable change in color, such as the chicken turning dull gray or green, rather than its original vibrant cooked appearance.
- The presence of visible mold, which can appear as fuzzy spots of various colors, indicating significant spoilage.
