Enjoy the sweet and creamy delight of homemade corn pudding, a comforting baked casserole perfect for any occasion. This rich, custard-like dish, often made with fresh or canned corn, eggs, milk, and sugar, is best savored fresh but can be stored for a short period.
Storage Time
3–4 days in the refrigerator, up to 2–3 months if frozen.
Temperature
Store refrigerated at or below 4°C (40°F).
Freezing
Corn pudding freezes surprisingly well, preserving its delightful texture and flavor for future enjoyment. Allow the baked pudding to cool completely. Portion it into airtight containers or wrap individual servings tightly in plastic wrap followed by a layer of aluminum foil to prevent freezer burn. Thaw overnight in the refrigerator and gently reheat in a low oven or microwave until warmed through. Note that the texture might become slightly softer after freezing and thawing.
Signs of Spoilage
- A sour or off odor emanating from the pudding.
- Visible mold growth, which can appear as fuzzy spots of various colors.
- A slimy or unusually watery texture, indicating bacterial activity.
