Storage Time
Raw filet mignon can be safely stored in the refrigerator for 3 to 5 days, though for optimal taste and texture, it's best consumed within 1 to 2 days of purchase. When properly prepared and frozen, this exquisite cut can maintain its quality for 6 to 12 months.
Temperature
Always keep raw filet mignon refrigerated at a consistent, cold temperature between 0–4°C (32–40°F). This low temperature is essential to significantly slow down bacterial growth and maintain the meat's freshness.
Freezing
To freeze filet mignon effectively, wrap each individual steak tightly in plastic wrap, then encase it in a layer of heavy-duty aluminum foil or place it in an airtight freezer bag, expelling as much air as possible. This double-layer protection is vital to prevent freezer burn and preserve the meat's quality. For safe thawing, transfer the frozen filet mignon to the refrigerator and allow it to defrost slowly overnight. Avoid thawing at room temperature, as this can encourage rapid bacterial proliferation. Signs of Spoilage
- A distinct sour, pungent, or unusually strong odor that is clearly 'off' and indicates bacterial spoilage, making the meat unsafe to eat.
- Any significant change in color from its natural vibrant red or purplish-red to a dull, grayish-brown, green, or even blackish hue, especially if accompanied by other signs.
- A slimy, sticky, or tacky film on the surface of the meat when touched, rather than the firm, slightly moist feel of fresh, wholesome beef.
