Fresh kumara, also known as sweet potato, is a versatile root vegetable packed with nutrients and natural sweetness. Proper storage is key to preserving its firm texture and vibrant flavor for a multitude of culinary applications, from roasting to mashing.
Storage Time
Up to 3-4 weeks in a cool, dark pantry; 1-2 weeks in the refrigerator.
Temperature
Ideal pantry storage is between 10-15°C (50-59°F). Refrigeration is less ideal but acceptable for short periods.
Freezing
Kumara can be frozen for long-term preservation, but it's best to cook it first. Roast or boil kumara until tender, then cool completely. Portion into airtight containers or freezer bags, removing as much air as possible. Frozen cooked kumara is excellent for smoothies, baked goods, or as a side dish and can last up to 10-12 months. Thaw overnight in the refrigerator or gently reheat from frozen.
Signs of Spoilage
- Soft or mushy spots developing on the skin.
- Visible mold growth, often appearing as fuzzy patches.
- A sour or fermented smell emanating from the kumara.
