Freezing
To freeze fresh sweetcorn, first blanch the ears by boiling them for 5-7 minutes, then immediately plunge them into ice water to stop the cooking process. Once cooled, cut the kernels off the cob or freeze the ears whole. For best quality, wrap tightly in plastic wrap or place in freezer bags, removing as much air as possible. Thaw frozen corn in the refrigerator or by adding it directly to cooked dishes. Frozen corn retains good quality for up to 12 months.
