Fresh zucchini, a versatile summer squash, is best enjoyed when crisp and firm. Proper storage is key to preserving its delicate texture and vibrant flavor for your culinary creations.
Storage Time
3–5 days in the refrigerator, up to 8–10 months frozen
Temperature
Keep refrigerated at 0–4°C (32–40°F)
Freezing
To freeze fresh zucchini, wash, trim ends, and cut into desired shapes (slices, cubes, or shredded). Blanching is recommended to preserve quality: boil for 1-2 minutes, then immediately plunge into ice water. Drain thoroughly and pat dry before packaging in airtight containers or freezer bags, removing as much air as possible. Frozen zucchini is ideal for cooked dishes like soups, stews, or baked goods, as its texture will soften upon thawing. Thaw overnight in the refrigerator.
Signs of Spoilage
- Soft, mushy spots or a wrinkled, shriveled appearance.
- Slimy residue on the skin.
- A sour or fermented odor.
