Rich, dense, and often boozy, fruitcake is a classic baked good that can last for an impressively long time when stored correctly. Its high sugar and alcohol content act as natural preservatives, making it a fantastic candidate for long-term food storage.
Storage Time
Up to 1 month in a cool pantry, 2-3 months in the refrigerator, and 1-2 years when properly frozen.
Temperature
Ideal pantry storage is cool and dry, around 15-20°C (59-68°F). Refrigeration at 0-4°C (32-40°F) is also suitable for extending freshness.
Freezing
Fruitcake freezes exceptionally well, preserving its moist texture and rich flavors for extended periods. Wrap individual slices or the entire cake tightly in plastic wrap, followed by a layer of aluminum foil or a freezer-safe airtight container. To thaw, unwrap the cake and let it come to room temperature on a wire rack for several hours or overnight. Avoid microwaving, as it can alter the texture.
Signs of Spoilage
- Visible mold growth, especially fuzzy or discolored patches.
- An off, sour, or fermented smell that is distinctly unpleasant.
- A sticky or slimy texture on the surface, indicating bacterial activity.
