Storage Time
3–4 days in the refrigerator, up to 2–3 months frozen

Keep refrigerated at 0–4°C (32–40°F) for optimal freshness and safety.
Freezing
To freeze grilled chicory, first ensure it has cooled completely to room temperature. For best results, spread the cooled chicory in a single layer on a baking sheet and flash freeze for about 1-2 hours until solid. This prevents pieces from clumping together. Then, transfer the frozen chicory to an airtight freezer-safe bag or container, pressing out as much air as possible to prevent freezer burn. Label with the date. When ready to use, thaw overnight in the refrigerator and reheat gently in a pan or oven; be aware that the texture may become softer after freezing and thawing.
Signs of Spoilage
- An off-putting, sour, or fermented odor, distinctly different from its fresh, slightly bitter aroma.
- A slimy, mushy, or excessively soft texture, losing its characteristic tender-crisp bite.
- Any visible growth of mold, appearing as fuzzy white, green, or black patches on the surface.
- Significant discoloration, such as excessive browning, dullness, or dark spots beyond the initial charring.
