Freezing
Allow grilled vegetables to cool completely before portioning them into airtight containers or freezer bags. For optimal quality upon thawing, consider freezing them in a single layer on a baking sheet before transferring to a freezer bag to prevent clumping. To thaw, transfer to the refrigerator overnight or gently reheat from frozen in a skillet or oven. Note that some vegetables may lose a bit of their crispness after freezing and thawing.
