Temperature
Store uncooked rice in a cool, dry place (pantry) between 15-20°C. Cooked risotto should be refrigerated at 0-4°C.
Freezing
Cooked risotto can be frozen to preserve its quality for longer. Allow the cooked risotto to cool completely before portioning it into airtight containers or freezer bags. To thaw, transfer the frozen risotto to the refrigerator overnight and reheat gently on the stovetop with a splash of broth or water, or microwave until heated through. Freezing may slightly alter the texture, making it a bit softer, but it remains perfectly edible and delicious.
