Freezing
Roasted carrots can be frozen for longer storage. Allow them to cool completely, then spread them in a single layer on a baking sheet and freeze until solid. Transfer the frozen carrots to an airtight container or freezer bag, removing as much air as possible. They are best used within 6–8 months for optimal quality. Thaw overnight in the refrigerator or gently reheat from frozen. Note that texture may soften slightly after freezing and thawing.
