Storage Time
Roasted garlic cloves will maintain their best quality for about 7–10 days when stored properly in the refrigerator. For longer preservation, it can be frozen for up to 3 months, though texture may soften slightly upon thawing.
Temperature
Store roasted garlic in an airtight container in the refrigerator, ideally between 0–4°C (32–40°F).
Freezing
To freeze roasted garlic, allow it to cool completely. You can freeze whole cloves or mash them into a paste. Portion the roasted garlic into ice cube trays or small airtight containers or freezer bags. Once frozen, transfer to a freezer bag for optimal storage. Thaw overnight in the refrigerator before use. While freezing is excellent for preservation, the texture might become softer and more spreadable after thawing, making it perfect for sauces and dips.
Signs of Spoilage
- A strong, sour, or off-putting smell that is distinctly different from its usual sweet aroma.
- Visible mold growth, which can appear as fuzzy white, green, or black spots.
- A slimy or mushy texture that indicates the garlic has broken down significantly.
