Fresh truffles are a highly prized culinary ingredient, offering an intense, earthy aroma and a rich, complex flavor that elevates any dish. To preserve their delicate essence and maximize their gastronomic potential, proper storage is paramount.
Storage Time
Fresh truffles are best consumed within 5-7 days of purchase when stored correctly in the refrigerator. Their potent aroma diminishes over time, so aim to use them as soon as possible for the most vibrant flavor experience.
Temperature
Store fresh truffles in the refrigerator, ideally between 0°C and 4°C (32°F and 40°F), wrapped in a paper towel within an airtight container.
Signs of Spoilage
- A noticeable loss of their characteristic earthy aroma, replaced by a musty or ammoniac smell.
- A softening or mushy texture, indicating the truffle is beginning to break down.
- Visible mold growth, which can appear as fuzzy white or colored patches on the surface.
