Freezing
To freeze boiled yams, allow them to cool completely. For best results, mash or puree the yams before freezing, or freeze them in bite-sized chunks. Place them in airtight freezer-safe containers or heavy-duty freezer bags, removing as much air as possible to prevent freezer burn. Thaw frozen yams overnight in the refrigerator or gently reheat them directly from frozen in a saucepan or oven. Frozen yams may have a slightly softer texture upon thawing, but are still excellent for mashing, baking into casseroles, or incorporating into soups.
