1–2 weeks in the refrigerator, up to 12 months when frozen.

Freezing
To freeze fresh cayenne peppers, wash them thoroughly and pat them completely dry. You can freeze them whole, sliced, or chopped. For whole peppers, place them on a baking sheet in a single layer until frozen solid, then transfer to a freezer-safe bag or container. Sliced or chopped peppers can be directly placed into freezer bags. When ready to use, frozen peppers can be added directly to cooked dishes, as their texture will soften upon thawing. Avoid thawing and refreezing.
Signs of Spoilage
- Soft, mushy spots or wilting of the pepper flesh.
- Visible mold growth, often appearing as fuzzy white or black spots.
- A strong, unpleasant, or fermented odor.
