Storage Time
Up to 3-4 weeks in a cool, dark pantry or root cellar, and 1-2 months when properly refrigerated.
Temperature
Ideal pantry temperature is around 7-10°C (45-50°F). Refrigerated, aim for 0-4°C (32-40°F).
Freezing
To freeze fresh celeriac for extended preservation, it's best to blanch it first. Peel and chop the celeriac into desired sizes, then boil for 2-3 minutes. Immediately plunge into ice water to stop the cooking process, drain thoroughly, and pat dry. Store in airtight freezer bags or containers for up to 9-12 months. Frozen celeriac is best used in cooked dishes like soups or stews, as its texture may soften upon thawing.
Signs of Spoilage
- Soft or mushy spots developing on the root.
- Visible mold growth, often fuzzy and white or green.
- A strong, unpleasant, or fermented odor.
