Fresh fennel bulbs can last for 1 to 2 weeks in the refrigerator when stored correctly, and up to 6 to 8 months when properly frozen.
Temperature
For optimal freshness and to maintain its crispness, store fresh fennel bulbs in the coldest part of your refrigerator, ideally at a cool temperature of 0–4°C (32–40°F).
Freezing
To freeze fresh fennel and best preserve its quality, begin by washing and thoroughly trimming the bulbs, removing any fronds and tough outer layers. You can then slice or chop the fennel to your desired size for future recipes. For superior texture and color retention, blanch the fennel pieces in boiling water for 2-3 minutes, then immediately transfer them to an ice bath to halt the cooking process. Drain thoroughly, pat dry with a clean towel, and spread them in a single layer on a baking sheet to flash freeze for a few hours until solid. Once frozen, transfer the pieces to airtight freezer bags or containers, pressing out as much air as possible to prevent freezer burn. Label with the date. When ready to use, frozen fennel is best added directly to cooked dishes like soups, stews, or casseroles; for raw applications, thaw overnight in the refrigerator, though some slight texture softening may occur.
Signs of Spoilage
