Storage Time
Jerusalem artichokes can be stored in the refrigerator for up to 3-4 weeks when kept in a cool, dark, and humid environment. For longer preservation, they can be frozen for up to 6-8 months.

Store in the crisper drawer of your refrigerator, ideally between 0-4°C (32-40°F).
Freezing
To freeze Jerusalem artichokes, thoroughly wash and peel them. You can then blanch them in boiling water for 2-3 minutes, followed by an ice bath to stop the cooking process. Drain well and pat dry before sealing in airtight freezer bags or containers. Frozen Jerusalem artichokes are best used in cooked dishes like soups or stews, as their texture may soften upon thawing.
Signs of Spoilage
- Shriveling or soft spots on the skin, indicating dehydration or decay.
- Development of mold, which can appear as fuzzy white or green patches.
- An off, earthy, or fermented smell, signaling that the tubers are no longer fresh.
