Glutinous rice, also known as sticky rice or sweet rice, is a type of short-grain rice with a high amylopectin content, giving it a distinct chewy and adhesive texture when cooked. It's a staple in many Asian cuisines, perfect for both sweet desserts and savory dishes.
Storage Time
Uncooked: Up to 1 year in pantry. Cooked: 3–4 days in fridge, up to 2–3 months frozen.
Temperature
Store uncooked glutinous rice in a cool, dry pantry away from direct sunlight. Cooked glutinous rice should be refrigerated at or below 4°C (40°F).
Freezing
Cooked glutinous rice freezes exceptionally well, retaining much of its characteristic sticky texture. Allow cooked rice to cool completely before portioning it into airtight containers or freezer bags. To thaw, place in the refrigerator overnight or gently reheat in a microwave or steamer, adding a tablespoon of water if it seems dry.
Signs of Spoilage
- Unpleasant, sour, or musty odor.
- Visible mold growth, often appearing as fuzzy spots of various colors.
- Clumping or a slimy texture in cooked rice, indicating bacterial proliferation.
