Freezing
To freeze homemade tacos, it's best to separate components. Freeze cooked taco meat or fillings in airtight containers or freezer bags for up to 2–3 months. Tortillas can also be frozen individually wrapped in plastic wrap and then placed in a freezer bag for up to 2 months. Thaw frozen fillings in the refrigerator overnight or gently reheat them in a skillet or microwave. Thaw tortillas at room temperature or briefly microwave them. Avoid freezing fully assembled tacos as the texture of the toppings and tortillas can degrade significantly.
