Kaju katli, a beloved Indian cashew fudge, is a rich and decadent sweet often prepared for festivals and special occasions. Its smooth texture and delicate flavor make it a popular choice, but proper storage is key to preserving its delightful taste and quality.
Storage Time
Best enjoyed within 3-5 days at room temperature, up to 1 week in the refrigerator, and for up to 2-3 months when frozen.
Temperature
Store in a cool, dry place away from direct sunlight. For extended freshness, refrigeration at 0-4°C is recommended.
Freezing
Kaju katli freezes exceptionally well, maintaining its texture and flavor. Wrap individual pieces tightly in plastic wrap, then place them in an airtight container or freezer bag. To thaw, transfer the frozen kaju katli to the refrigerator overnight or let it come to room temperature for a few hours. Avoid refreezing once thawed.
Signs of Spoilage
- A sour or rancid smell, indicating the fats in the cashews have gone bad.
- A sticky or overly soft texture that doesn't firm up, suggesting moisture absorption or spoilage.
- Visible mold growth, which can appear as fuzzy spots of various colors.
