3–4 days in the refrigerator, up to 2–3 months in the freezer.

Freezing
To freeze roasted kumara, allow it to cool completely. Portion it into airtight containers or freezer bags, removing as much air as possible to prevent freezer burn. Frozen roasted kumara is best used within 2–3 months for optimal texture and flavor. Thaw overnight in the refrigerator or gently reheat from frozen in the oven or microwave.
