Freezing
While technically possible, freezing temaki vegetable is strongly discouraged as it severely compromises the quality and texture of this fresh dish. The sushi rice will become hard and then mushy upon thawing, the delicate nori seaweed will turn unpleasantly soggy, and the fresh vegetables will lose their crispness and vibrant color, becoming watery and limp.
