Freezing
While zucchini noodles can be frozen, their texture will soften considerably upon thawing due to their high water content. For best results, pat them very dry before freezing in a single layer on a baking sheet, then transfer to an airtight container or freezer bag. Thaw overnight in the refrigerator and use them in cooked dishes like stir-fries or casseroles, as they will be too mushy for raw preparations.
