Due to their high moisture content and minimal processing, proper storage is paramount to maintain their freshness, prevent bacterial growth, and extend their very short shelf life.
Storage Time
Typically 3–5 days in the refrigerator; they are not suitable for pantry storage or freezing due to rapid spoilage and texture degradation.
Temperature
Always keep fresh alfalfa sprouts refrigerated at a cool temperature, ideally between 0–4°C (32–40°F), to significantly slow down spoilage and maintain their delicate crispness.
Signs of Spoilage
- A slimy or sticky film developing on the delicate sprouts, indicating bacterial growth and a loss of freshness.
- Any sour, musty, or unpleasant odor emanating from the container, a clear sign that the sprouts have begun to spoil.
- Discoloration such as yellowing, browning, or the appearance of dark, withered spots on the green shoots.
- Visible mold growth, appearing as fuzzy white, gray, or black patches, which means the sprouts must be discarded immediately.
