Preserve the vibrant, herbaceous flavors of your homemade pesto sauce by storing it correctly. This versatile condiment, bursting with fresh basil, garlic, pine nuts, and Parmesan, can be enjoyed for weeks when kept chilled.
Storage Time
Up to 1 week in the refrigerator, up to 6 months in the freezer.
Temperature
Store refrigerated pesto in an airtight container at 0–4°C (32–40°F).
Freezing
Homemade pesto freezes beautifully, retaining most of its fresh flavor. Spoon portions into ice cube trays and freeze until solid, then transfer the pesto cubes to a freezer-safe bag or container for easy use. Thaw overnight in the refrigerator or gently warm on the stovetop. Note that the texture may slightly change upon thawing, becoming a bit more watery, but the flavor remains excellent.
Signs of Spoilage
- A sour or off smell, distinct from the usual garlicky aroma.
- Visible mold growth, appearing as fuzzy spots of various colors.
- A slimy or mushy texture, indicating bacterial activity.
