Freezing
Allow roasted vegetables to cool completely before portioning them into airtight containers or freezer bags. For best quality, freeze them in a single layer on a baking sheet before transferring to a freezer bag to prevent clumping. To thaw, transfer to the refrigerator overnight or reheat directly from frozen in an oven or microwave. Note that some vegetables may lose a bit of their crisp texture upon freezing and thawing.
